Brooks Woodworking offers different sizes of cutting boards and butcher blocks.

Cheese Slicers . Will cut just about any type of cheese (Hard Cheeses such as parmesan are not recommended).

Extra Small . Extra small boards are great for cutting limes and other small items. The average size is 8x5.

Small . You.ll love this board if you have just a couple things to cut. The average size is 10.5x8

Medium . This is a great board to cut multiple items (vegetables) on. The average size is 17.5x12

Medium Large . The juice grooves are prefect for cutting any type of meat. Each board is 16x16 and have juice grooves and stabilizer feet.

Large . Stabilizer feet provide an excellent grip on all types of counters and are especially useful on uneven surfaces like slate and tile. Large cutting boards include juice grooves and stabilizer feet.

Purpleheart (a.k.a. Peltogyne spp.) - Comes from the Leguminosae Family, which can be found in Central and South America, this exotic wood is a worldwide favorite. Tall and large trees grow abundantly, sometimes reaching a diameter of five feet. Purpleheart has a creamy white/gray sapwood. The heartwood is a bright, striking purple when freshly cut, darkening into a deeper purple with age.

Walnut. Comes from the Juglandaceae Family - There are about twenty species of walnut with six found in the U.S.A. Walnut trees are generally 80-100 feet tall with trunks of less than three feet. The sapwood is creamy white in color and may be three inches wide. Heartwood is a rich chocolate or purplish brown in color, with a dull sheen. Black walnut is normally straight grained and is noted for its beautiful grain character, producing more figure variation than any other wood.

Jatoba aka Brazilian Cherry - Comes from the Leguminosae Family. It grows in most of the South American islands as well as Mexico, Brazil and Peru. Jatoba (Hymenaea courbaril) grows to an average height of 120 feet with diameters of 2-4 feet. The heartwood varies in color from a salmon red to an orange brown when it is freshly cut which darkens to a red brown when seasoned.

Maple - Comes from the Acer Family. There are some 200 species of trees and shrubs worldwide. Hard Maple tends to have cream to white sapwood with a light reddish brown heartstock and is usually straight grained.

Hickory - Comes from the Juglandaceae Family. There are about twenty different species which are in North America, Mexico, China, and Indochina. Hickory Trees have massive trunks that reach heights of 160 feet with 6-7 feet in diameter. The wood is a white-cream with tan to brown streaks.
